Steak? Not here.

Last night, Andrea got to choose the meal for dinner, because she didn't get to do so on her birthday. She chose tuna casserole. If you think that's odd, when I asked Jared today if he had any ideas for supper, he asked if there was any tuna casserole left that he could have. Either my tuna casserole is good, or my kids are strange. Probably both. :-)

I'm sure your casserole is great! Want to send me the recipe? I've been eating a lot of tuna recently to help out with this cholesterol problem.

Hmm...My casserole probably won't help with cholesterol, although I can already think of one variation that would be better. Anyway, here it is: I cook 1 box of macaroni; I use a "garden rotini" variety which is corkscrew pasta in 3 flavors--regular, tomato, and spinach. It adds color (and I like to think it adds nutrients; I doubt it actually does).

While the water's boiling, I make a batch of white sauce. (This is where you might want to use a variant, since white sauce is not known to help lower cholesterol. Sometimes I've used cream of celery soup, and that works well, thinned with some milk.

I also thaw/partially cook a bag of mixed vegetables (usually peas, carrots, and corns). Then I mix the pasta, sauce/soup, vegetables, 2-3 cans of tuna (depending on how many I have in the house; I prefer 3 cans for a batch this size) with a couple handfuls of cheese in a casserole dish. I top it with some Parmesan cheese and wheat germ (instead of bread crumbs) and heat it in the oven until it's warmed through.

The cheese might be a problem for a low-cholesterol diet, but it could also be omitted.

You're right, that really won't help my problem. I guess I'll just stick to tuna, mustard and whole wheat sandwhiches.
